American-style buttermilk biscuits recipe

Delicious fluffy biscuits, perfect with pumpkin soup. Handle dough gently for tender layers. Make 9 square biscuits or 8 rectangles to share.
Ingredients:
  • 350g (21 ⁄3 cups) plain flour
  • 10.00 gm caster sugar
  • 12.00 gm baking powder
  • 1.25 gm bicarbonate of soda
  • 100g unsalted butter, chilled, cut into 1cm pieces, plus extra, to serve
  • 250ml (1 cup) buttermilk, plus 1 tbsp, extra
Instructions:
  • Preheat your oven to 200°C/180°C fan forced, then lightly flour a baking tray.
  • In a large bowl, sift together the flour, baking powder, sugar, and bicarbonate of soda. Add the butter and rub it into the dry ingredients until the mixture resembles coarse crumbs. Create a well in the center of the mixture and pour in the buttermilk. Use a flat-bladed knife to cut and mix until just combined and the dough begins to come together. Transfer the dough onto a lightly floured surface and gently gather it together without kneading.
  • Shape the dough into a 2cm-thick rectangle. Fold one-third from one short end over the center third, then fold over from the other short end to create 3 layers. Gently press the dough into an 18cm square and transfer it to the prepared tray.
  • Coat a large sharp knife with flour. Divide the dough into 9 squares, wiping the blade clean and dusting with flour as needed. Brush the tops with extra buttermilk and sprinkle with salt. Bake for 18 minutes, or until golden and puffed. Cool briefly on a wire rack. Enjoy warm or at room temperature with additional butter.
