Delicious European-inspired family recipe.
Ingredients:
  • 4 eggs, separated
  • 2 cups confectioners' sugar
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 tablespoon ground anise seed
  • 1 tablespoon cold water
Instructions:
  • Whisk egg whites and water until they form stiff peaks.
  • In a large bowl, whisk together egg yolks, sugar, salt, and vanilla until creamy. Gently fold in egg whites with a wire whisk. Sift in flour and anise, then stir gently until a slightly lumpy mixture forms.
  • Transfer the dough into a piping bag fitted with a large round tip and pipe 1-inch rounds onto a baking sheet. Allow the cookies to air dry overnight at room temperature.
  • The following day, place cookies on a sheet of parchment paper and bake at 350°F (175°C) for 20-25 minutes until bottoms are light brown and tops are still pale. Let them cool before enjoying.
  • Store the cookies in a cool place for 2 to 3 weeks to mellow and soften. Consider adding a slice of bread or apple to aid in softening.
