Tender beef roast cooked in spicy chili and tomato sauces, with a hint of Worcestershire and a blend of seasonings, served on toasted burger buns for a delicious BBQ meal.
Ingredients:
  • 1 beef eye of round roast (4 lb)
  • 1 teaspoon salt
  • 3 cans (8 oz each) Muir Glen™ organic tomato sauce
  • 1 bottle (12 oz) chili sauce
  • 1 medium onion, chopped
  • 1/2 cup vinegar
  • 1/4 cup butter
  • 1/4 cup lemon juice
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 10 burger buns, split
Instructions:
  • In a large Dutch oven, lay the beef and generously sprinkle with salt. Pour enough water to completely cover the beef. Bring to a boil, then lower the heat to medium, cover, and let simmer for 2 hours until the beef is tender (add additional water if needed after 1 hour).
  • In a 3-quart saucepan, combine all ingredients except buns. Bring to a boil, then simmer uncovered on low heat for 1 hour, stirring occasionally.
  • Let beef rest on plate or cutting board for 10 minutes, then shred or slice it. Serve on buns with barbecue sauce.
