Apple and cinnamon choux fritters

Easy and delicious cinnamon apple pastry puffs for a flavorful treat!
Ingredients:
  • 1 Granny Smith apple, peeled, grated
  • 1.25 gm ground cinnamon
  • Vegetable oil, for shallow-frying
  • Custard, to serve
  • 60g butter, chopped
  • 165.00 ml plain flour
  • 3 eggs, lightly beaten
  • 107.50 gm caster sugar
  • 2.50 gm ground cinnamon
Instructions:
  • Create a fragrant cinnamon sugar mixture by blending sugar and cinnamon in a bowl.
  • Create a delicious choux pastry by melting butter in a saucepan with 2/3 cup of cold water over medium heat. Heat for 3 to 4 minutes until the butter is melted and the mixture gently simmers.
  • Lower the heat and add the flour. Stir and cook for 2 to 3 minutes until the mixture pulls away from the side of the pan and forms a ball. Let it cool for 5 minutes.
  • Gradually combine the eggs using a wooden spoon until the dough is glossy. Mix in the apple and cinnamon.
  • In a deep frying pan over medium-high heat, warm oil. Spoon 1 level tablespoon of the mixture into the pan and make 6 fritters. Fry each side for 2 to 3 minutes until golden and fully cooked. Transfer fritters to cinnamon sugar using a slotted spoon, coat them, then move them to a plate. Repeat with remaining dough. Serve warm fritters with custard.
