Delicious apple hand pies, perfect with a scoop of ice cream and a dusting of sugar.
Ingredients:
  • 1 sheet (25cm x 25cm) frozen ready-rolled puff pastry, thawed
  • 1 large pink lady apple, peeled, quartered, core removed, thinly sliced
  • 27.20 gm sultanas
  • 20.00 gm caster sugar
  • Pinch ground cinnamon
  • 15g butter, cut into small pieces
  • 1 egg white, lightly whisked
  • Caster sugar, extra, to sprinkle
  • Vanilla ice cream, to serve, optional
Instructions:
  • Preheat your oven to a toasty 190°C. Line a baking tray with non-stick baking paper. Slice the pastry into four equal squares. Fold each square in half to create a triangle, then unfold.
  • Place the apple slices neatly on one side of each pastry piece, leaving a small border. Sprinkle over the sultanas, sugar, cinnamon, and butter. Moisten the edges with water, then carefully fold the pastry over to create a triangle shape, pressing the edges to seal tightly.
  • Coat the triangles with the whipped egg white and a light dusting of extra sugar. Bake the turnovers for 15-18 minutes, or until the pastry turns a beautiful golden brown.
  • Enjoy these delicious treats warm by themselves or paired with a scoop of creamy ice cream.
