Flaky Apple Turnovers

Flaky homemade puff pastry filled with sweet cinnamon apples.
Ingredients:
  • 1 recipe Quick Puff Pastry Dough
  • 4 cups apples, peeled, cored, finely chopped (3 to 4 medium)
  • 1/3 cup plus 1 tablespoon sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 tablespoon milk
Instructions:
  • Preheat your oven to 400°F and prepare 2 (18x13-inch) rimmed sheet pans lined with cooking parchment paper. Combine apples, 1/3 cup sugar, cinnamon, and flour in a medium bowl.
  • Take the prepared puff pastry dough and divide it in half. Place one half back in the refrigerator. Then, on a lightly floured surface, use a floured rolling pin to roll out the other half of the chilled dough into a 16x12-inch rectangle. Cut the dough into 12 (4-inch) squares using a sharp knife or pizza cutter.
  • Combine egg and milk in a small bowl. Brush squares' edges with egg wash, place a heaping tablespoon of apple mixture in the center of each square. Fold diagonally to form a triangle, press to seal, and crimp edges with a fork. Refrigerate on a cookie sheet for 15 minutes. Brush the turnovers with egg wash, sprinkle with 1 tablespoon sugar. Bake until golden brown, about 20 to 25 minutes. Transfer to a cooling rack immediately and allow to cool slightly before enjoying.
  • Assemble and bake turnovers using the second half of the refrigerated dough and any leftover dough scraps. Brush them with the remaining egg wash and sprinkle 1 tablespoon of sugar before baking.
  • Prepare turnovers for future baking: Freeze them flat in an airtight container with waxed paper between each. In a small bowl, whisk together egg and milk until smooth. Brush the turnovers with the egg wash, sprinkle with sugar, and bake as instructed, extending bake time by 5 to 7 minutes until golden brown.
