Elevate your dessert game with a delectable apple and cranberry upside-down cake by MasterChef contestant Kylie Millar.
Ingredients:
  • 50g butter
  • 120g brown sugar
  • 3 medium Granny Smith apples, cut into thick wedges
  • 75g dried cranberries
  • 115g butter
  • 150g brown sugar
  • 1 tsp vanilla bean paste
  • 2 free range eggs
  • 210g plain flour
  • 6.00 gm baking powder
  • 0.60 gm salt
  • Cream, to serve
Instructions:
  • Preheat your oven to 190C and prepare a 20cm round cake tin by greasing and lining it with baking paper.
  • For the apple layer, melt butter in a frying pan over gentle heat. Stir in sugar until melted, then raise heat until bubbling. Pour this sweet mixture into the pan and layer cranberries and apple slices attractively on top.
  • For the cake batter, cream butter and sugar until light and fluffy using electric beaters in a bowl. Mix in vanilla. Incorporate eggs one at a time, beating well after each addition until smooth. In a separate bowl, sift flour, baking powder, and salt. Add flour mixture and milk to the cake batter in alternating batches until fully combined. Pour over apples and cranberries and bake for 50 minutes or until a cake skewer comes out clean. Let it cool for 30 minutes, then flip onto a wire rack to cool completely. Serve with cream.
