Apple & Lancashire cheese pie

Impress with this simple and delicious apple pie, ideal for any meal. Choose a sweet and crisp apple for best results.
Ingredients:
  • 500 g all butter puff pastry
  • 1 vegetable stock cube
  • 300 g waxy potatoes
  • 4 apples, such as Royal Gala, Golden Russet, Cox
  • 2 shallots
  • 200-250 g Lancashire or sharp Cheddar cheese
  • 2 sprigs of fresh thyme
  • 1 large free-range egg
Instructions:
  • 1. Preheat the oven to 190ºC/375ºF/gas 5. 2. Divide the pastry into 2 pieces and roll each into a rectangle slightly larger than A4. 3. Dissolve the stock cube in boiling water in a saucepan. 4. Cut the potatoes into 5mm discs and parboil for 3 to 4 minutes, then drain and let them dry. 5. Line a baking tray with greaseproof paper and place one pastry rectangle on top. 6. Arrange half the potatoes evenly on the pastry, leaving a 2cm border, and season. 7. Thinly slice the apples into discs and layer half over the potatoes. 8. Scatter half the shallot, cheese, and thyme over the apples. 9. Repeat with another layer of potatoes, apples, shallot, cheese, and thyme. 10. Beat the egg and brush the pastry edges with it. 11. Place the second pastry rectangle on top and press the edges together. 12. Score the top, brush with egg, then bake for 30-40 minutes until golden and puffed. 13. Cut into wedges and serve with chutney and salad.
