Lemony apple and macadamia crusted roast lamb elevates this classic dish to gourmet status.
Ingredients:
  • 100g macadamia nuts
  • 1 small granny smith apple, grated
  • 1 lemon, rind finely grated, juiced
  • 40.00 ml roughly chopped fresh rosemary
  • 1 kg lamb racks, cut into 4 even-sized racks
  • Olive oil spray
  • 80g pkt baby rocket
  • 1 tomato, quartered, seeds removed, cut into strips
  • 150g organic feta, sliced thinly
Instructions:
  • Crush nuts in a mortar and pestle for added texture. Mix with apple, lemon zest, and fragrant rosemary. Season generously with salt and pepper for the perfect balance of flavors.
  • Preheat your oven to a sizzling 200°C. Nestle the lamb racks in a roasting pan and generously coat one side of each rack with the delightful macadamia mixture. Spritz them lightly with luscious olive oil. Roast them for 25-35 minutes until they reach medium doneness. Once done, simply cover them with foil and let them rest.
  • In a spacious bowl, mix together arugula, tomato, and crumbled feta. Drizzle with fresh lemon juice and season with salt and pepper to taste.
