Cheesy bacon and apple crostini on French bread - a delicious and indulgent Italian-inspired appetizer!
Ingredients:
  • 6 slices bacon
  • 4 cups finely chopped peeled apples (3 medium)
  • 1 teaspoon grated gingerroot
  • 1/4 cup packed brown sugar
  • 1 tablespoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 2 tablespoons apple juice
  • 24 slices (1/2 inch thick) baguette French bread
  • 2 tablespoons olive oil
  • 1 1/2 cups shredded sharp Cheddar cheese (6 oz)
  • Additional fresh thyme sprigs, if desired
Instructions:
  • Cook bacon in a 12-inch nonstick skillet until crispy. Place on paper towels to drain, then crumble and set aside. Keep the delicious bacon drippings in the skillet for added flavor.
  • In a skillet, sauté apples and gingerroot in flavorful bacon drippings over medium-high heat until golden and soft, stirring occasionally. Add brown sugar, thyme, and salt, cook for a minute, then pour in apple juice. Cook another minute, remove from heat, and let it cool completely.
  • Preheat oven to 450°F. Arrange baguette slices in a single layer on an ungreased cookie sheet. Brush with 1 tablespoon oil. Bake for 3 to 5 minutes until toasted. Flip slices over and brush with the remaining 1 tablespoon oil. Bake for an additional 3 to 5 minutes until golden and crispy.
  • Combine the cheese and bacon with the apples in a skillet, then toss together. Spoon about 1 tablespoon of the apple mixture onto each baguette slice. Bake for 5 minutes or until the cheese is melted. Top with thyme sprigs for garnish and serve hot.
