Indulge in nostalgic bread pudding topped with luscious caramel sauce.
Ingredients:
  • 4 whole eggs
  • 1 egg yolk
  • 3/4 cup granulated sugar
  • 2 1/2 cups milk
  • 2 1/2 cups whipping cream
  • 1 tablespoon vanilla
  • 1 teaspoon ground cinnamon
  • 3 medium apples, peeled, cubed (2 cups)
  • 12 oz French or other firm bread, cut into 1/2-inch slices, then cut into 1 1/2-inch pieces (10 cups)
  • 2 tablespoons butter or margarine, melted
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup butter or margarine
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup half-and-half
Instructions:
  • Preheat the oven to 325°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Whisk together 4 whole eggs, 1 egg yolk, and 3/4 cup granulated sugar until smooth. Mix in milk, whipping cream, vanilla, and 1 teaspoon cinnamon until well combined. Gently fold in apples and 7 cups of bread pieces. Allow mixture to rest for 20 minutes.
  • Spread the apple mixture in the baking dish and top it with the remaining 3 cups of bread pieces. Drizzle melted butter over the bread. In a small bowl, combine 2 tablespoons of granulated sugar with 1/2 teaspoon of cinnamon, then sprinkle this mixture over the top.
  • Bake for 55 to 65 minutes until the top is puffed and light golden brown, with a slightly jiggly center. Allow it to cool for 30 minutes.
  • In a small saucepan, bring the sauce ingredients to a boil over high heat, stirring constantly, until the butter melts and the sauce is hot. Serve the warm bread pudding with the sauce.
