Delicious apple cake with raisins, walnuts, grated apple, and spices, sweetened with fruit juice, not sugar.
Ingredients:
  • 1 cup self-rising flour
  • 0.5 cup butter, cut into 1-inch chunks
  • 1 teaspoon ground nutmeg
  • 0.625 cup chopped walnuts
  • 1 cup chopped raisins
  • 1.5 cups grated apple
  • 0.25 cup pineapple juice
  • 1 tablespoon grated lime zest
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x5-inch loaf pan.
  • Combine the flour and butter in a bowl until the mixture resembles small peas. Mix in the cinnamon and nutmeg.
  • Combine walnuts, raisins, and apples in the mixture. Incorporate grated lime rind, eggs, and pineapple juice. Mix well until fully blended. Transfer the mixture into the pan and level the surface.
  • Place in a preheated oven for approximately 1 1/4 hours, or until a toothpick inserted in the center of the cake emerges clean. Remove from the oven and allow to cool on a wire rack.
