Fall cardamom apple cake: A nostalgic twist on a classic pound cake, featuring fragrant cardamom, sliced apples, and a buttery crumb. Perfectly balanced, not too sweet, and ready in just over an hour for a delightful anytime treat.
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cardamom
  • 1/8 teaspoon salt
  • 1/3 cup butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 1/3 cup milk
  • 1/3 cup sour cream
  • 1 cup 1/2-inch slices peeled apple (1 medium)
  • 1 1/2 teaspoons granulated sugar
  • 1/8 teaspoon ground cardamom
  • 2 teaspoons powdered sugar
Instructions:
  • Preheat oven to 350°F and greast a 9-inch glass pie plate with cooking spray. In a small bowl, combine flour, baking powder, 1/2 teaspoon of cardamom, and salt; set aside.
  • In a medium bowl, cream together softened butter and 3/4 cup granulated sugar using an electric mixer. Start on low speed for 30 seconds, then increase to medium and beat for 2 to 3 minutes until light and fluffy, scraping the bowl occasionally. Reduce speed to low and mix in eggs one at a time until smooth. Add vanilla. Gradually incorporate one-third of the flour mixture, then half of the milk, mixing well after each addition, until smooth. Repeat with remaining flour and milk, ending with flour. Scrape the sides of the bowl as needed. Blend in the sour cream until fully incorporated. Spread the batter in a pie plate.
  • Layer the apple slices on top of the batter. Combine 1 1/2 teaspoons of granulated sugar and 1/8 teaspoon of cardamom in a small bowl, then evenly sprinkle the mixture over the apple slices.
  • Bake for 30-34 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 30 minutes.
  • Just before serving, dust the top with a light snowfall of powdered sugar. Cut into 8 generous wedges to serve 8. Keep covered at room temperature.
