Delicious zucchini and apple cinnamon muffins - a perfect breakfast for the family.
Ingredients:
  • 1.25 cups white sugar
  • 0.66666668653488 cup oil
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 2.25 cups all-purpose flour
  • 1.5 tablespoons ground cinnamon, or more to taste
  • 0.75 teaspoon baking soda
  • 0.75 teaspoon baking powder
  • 2 cups shredded zucchini
  • 1 cup shredded apple
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare 24 muffin cups by spraying them with cooking spray or lining them with paper liners.
  • In a bowl, smoothly combine sugar, oil, eggs, and vanilla extract using a whisk. Gently mix in flour, cinnamon, baking soda, and baking powder until just combined; then fold in zucchini and apple.
  • Fill the prepared muffin cups with batter, leaving a little space at the top.
  • Bake in the preheated oven for about 25 minutes until the muffins spring back when the top is gently pressed.
