Wholesome apple crumble bliss balls - a sweet twist on a classic dessert made snackable.
Ingredients:
  • 2 Jazz apples, cored, chopped
  • 8 Anzac biscuits
  • 165.00 ml dried apples
  • 50.00 gm traditional rolled oats
  • 27.50 gm moist coconut flakes, plus 27.50 gm extra to coat
  • 125.00 ml peanut coconut spread
  • 4.40 gm vanilla extract
  • 1.25 gm ground cinnamon
Instructions:
  • In a small saucepan over medium heat, cook the apple with 1 tablespoon of water, covered, stirring occasionally for 8 to 10 minutes until very tender. Mash coarsely and allow to cool completely.
  • Next, add the biscuits to a food processor and pulse until they become coarse crumbs. Set aside 1/2 cup of the crumb mixture for later use.
  • Combine the cooled apple, dried apple, oats, coconut, spread, vanilla, and cinnamon in a food processor. Process until the mixture holds together when pressed, about 1 minute. Roll the mixture into 3cm balls. Mix the reserved biscuit mixture with extra coconut. Coat the balls in the biscuit mixture. Refrigerate for 1 hour until firm. Serve.
