Ingredients:
  • 100 g dried apple
  • 200 g self-raising flour
  • 100 g unsalted butter (cold)
  • 100 g caster sugar
  • 1 large egg
Instructions:
  • 1. Preheat the oven to 200ºC/400ºF/gas 6. Line two trays with greaseproof paper and lightly coat with olive oil. 2. Blend the apple in a food processor until finely chopped. Add flour, cubed butter, sugar, and a pinch of sea salt. Pulse into fine crumbs for 1 minute, then set aside 3 tablespoons of the mixture. 3. Mix in the egg until well combined. 4. Divide the mixture into 24 pieces, roll into balls, and gently press into 4cm rounds on the prepared trays. 5. Sprinkle the reserved mixture on top of the cookies and lightly press it in. 6. Bake for 8 to 10 minutes until lightly golden. 7. Let the cookies cool slightly before transferring to a wire cooling rack. Enjoy!
