Apple crumble dessert cake

Cozy up with a warm and delicious apple crumble cake for the ultimate winter treat.
Ingredients:
  • 220g butter, chopped, melted
  • 4 eggs, at room temperature
  • 412.50 gm self-raising flour
  • 322.50 gm caster sugar
  • 235.00 gm sour cream
  • 42.90 gm custard powder
  • 4.40 gm vanilla essence
  • 800g can apple pie fruit
  • Double thick cream, to serve
  • 187.50 ml plain flour
  • 74.25 gm white sugar
  • 4.00 gm baking powder
  • 2.50 gm ground cinnamon
  • 75g butter, chilled, chopped
Instructions:
  • Preheat your oven to 180°C. Grease a 5cm-deep, 20cm x 30cm roasting dish or slab pan. Line the base and sides with baking paper, leaving a 2cm overhang on both long ends.
  • With an electric mixer, whip together melted butter, eggs, flour, caster sugar, sour cream, custard powder, and vanilla essence until light and airy, approximately 3 minutes.
  • Transfer half of the mixture into the prepared dish. Layer the apples on top of the mixture. Finish by spreading the remaining mixture over the apples.
  • Prepare crumble topping by combining flour, white sugar, baking powder, and cinnamon in a bowl. Use your fingertips to gently incorporate the butter into the flour mixture until it forms a coarse breadcrumb texture. Sprinkle the finished topping over the cake mixture.
  • Bake cake for around 1 to 1 1/4 hours until a skewer inserted into the center comes out clean. Enjoy warm with cream.
