Delicious apple-filled tarts with luscious custard, perfect for indulging your sweet tooth.
Ingredients:
  • 180g apple
  • 5.30 gm lemon juice
  • 2 sheets filo pastry
  • Canola oil cooking spray
  • 10.00 gm almond meal
  • 20.00 gm caster sugar
  • 0.63 gm ground cinnamon
  • 10.00 gm custard powder
  • 10.00 gm caster sugar
  • 257.50 gm low-fat milk
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced and lightly grease 4 of the 1/3 cup-capacity holes in a 6-hole muffin pan.
  • Prepare a luscious custard by mixing custard powder, sugar, and 1 tablespoon of milk in a saucepan over medium-low heat. Gradually pour in the rest of the milk. Cook and stir for 5 to 7 minutes until the mixture thickens and coats the back of a wooden spoon. Remove from heat and cover the surface with plastic wrap to cool.
  • In a bowl, mix together apple and lemon juice. Lay one filo sheet on a flat surface and spray lightly with oil. Place the second filo sheet on top and fold in half. Cut into 4 squares and press each square into a prepared pan. Sprinkle almond meal over the filo, then add three-quarters of the apple mixture. Finally, sprinkle with caster sugar and half of the cinnamon.
  • Bake until filo is golden, about 10-15 minutes. Let stand in pan for 2 minutes before transferring to a wire rack. Cool for 5 minutes, then spoon custard into cases. Finish by topping with remaining apple and cinnamon. Serve and enjoy!
