Irresistibly creamy apple scroll, a delightful tea time treat.
Ingredients:
  • 10.00 gm custard powder
  • 20.00 gm caster sugar
  • 193.13 gm milk
  • 375.00 gm wholemeal self-raising flour, sifted
  • 45.00 gm brown sugar
  • 125g unsalted butter, chilled, chopped
  • 171.60 gm buttermilk
  • 125.00 ml drained canned sliced pie apples
  • 1 tsp cinnamon sugar
Instructions:
  • Prepare a baking tray with parchment paper. In a small saucepan over medium heat, combine custard powder, caster sugar, and milk. Stir and cook for 2 to 3 minutes until thickened. Remove from heat, cover with plastic wrap touching the surface, and let it cool completely.
  • Combine flour, brown sugar, cinnamon, and butter in a large bowl. Use your fingers to rub the butter into the mixture until it resembles fine breadcrumbs. Pour in the buttermilk and gently stir with a butter knife until just combined.
  • Transfer the dough onto a lightly floured surface and knead briefly until smooth. Roll out the dough between 2 sheets of baking paper into a 20cm x 30cm rectangle. Leaving a 5cm border on 1 long side, evenly spread custard over the dough. Arrange the apples on top of the custard. Roll up the dough, starting from the side opposite the border, like a Swiss roll. Transfer the roll onto a baking tray lined with baking paper and freeze for 20 minutes or until firm.
  • Preheat the oven to 200°C/180°C fan-forced. Slice the dough into 10 even pieces, then place them on a baking tray cut side-up. Sprinkle with cinnamon sugar and bake for 20-25 minutes until golden and hollow-sounding. Let them cool on a wire rack before serving warm or cold.
