Delicious cream biscuits filled with apple and custard - a winning dessert!
Ingredients:
  • 1 large Granny Smith apple, peeled, cored, roughly chopped
  • 55g caster sugar
  • 10.00 gm custard powder
  • 60ml milk
  • 1.10 gm vanilla extract
  • 125g mascarpone cheese
  • 12 Lattice biscuits
  • 12.00 gm icing sugar mixed with 1 tsp ground cinnamon, to dust
Instructions:
  • In a saucepan over low heat, gently simmer apple with 2 tablespoons of sugar and 2 tablespoons of water, stirring occasionally, until the apple is tender, about 8-10 minutes. Let it cool.
  • In a small saucepan, combine custard powder, milk, vanilla extract, and the additional 1 tablespoon of sugar. Cook over low heat, stirring continuously for 4-5 minutes until the custard thickens and comes to a boil. Remove from heat, cover with plastic wrap to prevent a skin from forming, and let it cool. Once cooled, whisk in the mascarpone cheese.
  • Take 8 biscuits and spread them with the luscious custard mixture. Add a dollop of stewed apple on top. Place 2 of these on each of the 4 plates. Finish by stacking the remaining biscuits on top to create 4 delightful stacks. Sprinkle with cinnamon sugar and serve.
