Custard apple ice cream

Impress critics with gourmet ice-cream.
Ingredients:
  • 3 custard apples
  • 300ml thickened cream
  • 125ml milk
  • 80g caster sugar
  • 3 egg yolks
  • 20.00 ml Malibu
  • 4 passionfruit, halved
  • Shredded coconut, toasted
Instructions:
  • Halve the custard apple and remove the flesh and seeds, placing them in a strainer over a bowl. Use a spoon to press the mixture through the strainer. Discard the seeds and pulp, then strain the puree into a jug. Repeat for the remaining custard apples.
  • Gently warm the cream and milk in a saucepan over low heat until heated through but not boiling.
  • Whisk sugar, egg yolks, and Malibu in a heatproof bowl until thick and pale, about 3 minutes.
  • Gradually pour the hot cream mixture into the egg mixture while whisking continuously. Transfer the mixture back to the saucepan and cook over low heat for 4 minutes, stirring until it thickens. Allow it to cool.
  • Prepare a 22cm x 9cm loaf pan by lining it with plastic wrap. Blend the puree into the custard and transfer the mixture to a metal bowl. Freeze for 2 hours, until the edges are set but the center remains soft. Pour the mixture into the loaf pan and freeze it overnight. Unmold the frozen dessert, discard the plastic wrap, and slice it. Serve by topping with passionfruit pulp and a sprinkle of coconut.
