Apple and custard scones

Elevate your morning tea with classic scones, apple compote, and creamy custard for a fancy and delicious treat!
Ingredients:
  • 4 large red apples, cored, cut into wedges
  • 40g butter, chopped
  • 54.00 gm maple syrup
  • Thick custard, extra, to serve
  • 450g (3 cups) self-raising flour
  • 50g chilled butter, cut into 1cm pieces
  • 1 red apple, peeled, cored, coarsely grated
  • 250ml (1 cup) milk
  • 60ml (1/4 cup) thick custard
Instructions:
  • Preheat your oven to 220C (200C fan forced) and grease a shallow baking dish. Combine apples, butter, and maple syrup in the dish, then bake for 20-30 minutes until soft and golden, stirring occasionally. Let it cool briefly before serving.
  • Prepare a floured baking tray. In a large bowl, mix flour and butter until it resembles coarse breadcrumbs. Add grated apple, make a well in the center, and pour in milk and custard. Use a knife to stir until a wet dough forms.
  • Transfer the dough to a floured surface and lightly knead it until smooth, adding a touch more flour if needed. Pat it down into a 2.5cm-thick disc. Use a 6.5cm round cutter to cut out the scones, ensuring you cut them as closely together as you can. Carefully gather and reroll any dough scraps to make more scones, aiming for a total of 12 scones.
  • Arrange the scones snugly on the baking tray. Bake for 12-15 minutes until they are puffed and golden. Then, cool them on a wire rack.
  • Top with apple compote and extra custard before serving.
