Try a new twist on apple baking with an apple-fig loaf drizzled in honey glaze.
Ingredients:
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 2/3 cup granulated sugar
  • 1/2 cup canola or vegetable oil
  • 1 egg
  • 1 egg yolk
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup milk
  • 1 cup chopped peeled apples
  • 1/2 cup dried figs, chopped
  • 1/3 to 1/2 cup powdered sugar
  • 2 tablespoons honey
  • 1 tablespoon butter, softened
  • Dash ground allspice
Instructions:
  • Preheat oven to 350°F. Grease the bottom of an 8x4-inch loaf pan with cooking spray. In a medium bowl, whisk together flour, cinnamon, baking powder, salt, nutmeg, and 1/4 teaspoon of allspice for a flavorful mix.
  • Start by mixing granulated sugar and oil in a large bowl with an electric mixer until well blended, about 1 minute on medium speed. Add one egg and one egg yolk at a time, beating well after each addition. Stir in the vanilla.
  • Alternate adding the flour mixture and milk into the sugar mixture on low speed, making sure to beat until smooth after each addition. Gently fold in the apples and figs, then pour the batter into the pan.
  • Bake for 55 to 65 minutes until a toothpick inserted in the center comes out clean. Allow to cool in the pan on a cooling rack for 10 minutes.
  • Gently release the loaf from the pan and transfer it to a cooling rack, top side up. Allow it to cool completely for about 2 hours.
  • In a small bowl, whip together 1/3 cup powdered sugar, honey, butter, and a pinch of allspice until smooth. Gradually mix in more powdered sugar until you reach your desired glaze thickness. Spread the glaze over the loaf. Allow it to set until slightly sticky to the touch. Wrap tightly and refrigerate.
