Apple fritter 'doughnuts'

Create beautiful apple fritter doughnuts with just two apples and basic pantry ingredients.
Ingredients:
  • 150g (1 cup) self-raising flour
  • 5.00 gm ground cinnamon
  • 200ml chilled soda water
  • 2 large red apples
  • Vegetable oil, for frying
  • 100g (1/2 cup) caster sugar
  • Vanilla ice-cream, to serve
  • Caramel sauce, to serve
Instructions:
  • Combine the self-raising flour and 1 tsp ground cinnamon in a bowl, then slowly whisk in 200ml chilled soda water.
  • Prepare the 2 large red apples by trimming the tops and bases. Cut each apple crosswise into 6 slices, and ensure to remove the cores.
  • Fill a medium saucepan halfway with vegetable oil and heat over medium-high heat. Dip apple slices in batter and fry in batches until they turn golden brown and crispy, about 3 minutes. Drain on paper towels.
  • In a bowl, mix the caster sugar with the remaining 1 tsp ground cinnamon. Add the fritters and toss them until they are coated. Serve with ice cream and caramel sauce, if desired.
