Ingredients:
  • 1/2 cup sugar
  • 1 cup milk
  • 3 egg yolks, beaten
  • 2 cups whipping (heavy) cream
  • Red or green food color, if desired
  • 3 medium eating apples, peeled, cored and cut up
  • 1 tablespoon lemon juice
Instructions:
  • In a 1-quart saucepan, combine 1/2 cup sugar, milk, salt, and egg yolks. Cook over medium heat, stirring constantly until it almost boils. Transfer the mixture to a chilled bowl and refrigerate uncovered for 1 to 1.5 hours until it reaches room temperature.
  • Combine the whipping cream, vanilla, and 3 to 4 drops of food color into the milk mixture, stirring gently.
  • Combine half of the apples, 1/2 cup sugar, and lemon juice in a food processor or blender. Pulse until coarsely chopped. Add remaining apples and pulse until finely chopped, but not mashed.
  • Combine the apple mixture with the milk mixture, then transfer the mixture into a 2-quart ice-cream freezer. Follow the manufacturer's directions for freezing.
