Apple Lemon with Cinnamon Muffins

Lemon and cinnamon-infused apple muffins for extra deliciousness!
Ingredients:
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 pinch salt
  • 0.5 cup sugar
  • 2 eggs, lightly beaten
  • 10 tablespoons butter
  • 1 tablespoon lemon zest
  • 1 teaspoon lemon juice
  • 1 cup milk
  • 1 large Granny Smith apple - peeled, cored and chopped
  • 1 tablespoon sugar
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and generously grease 12 muffin cups.
  • Sift together the flour, baking powder, and salt in a bowl. In another bowl, cream 1/2 cup sugar with eggs, butter, lemon zest, lemon juice, and milk. Combine the creamed mixture with the dry ingredients until evenly moist. Gently fold in the apples, then spoon into muffin cups.
  • Combine the 1 tablespoon of sugar with cinnamon, then generously sprinkle over the muffin batter.
  • Bake in the preheated oven for 15 minutes or until a toothpick inserted in the center of a muffin comes out clean. Allow to cool for 1 to 2 minutes before transferring to wire racks to cool completely.
