Cream cheese dough filled with apple pie filling, rolled in cinnamon-sugar - irresistible apple pie cookies.
Ingredients:
  • 1 cup butter
  • 6 ounces cream cheese, softened
  • 2 tablespoons vanilla extract
  • 2 cups all-purpose flour
  • 5 teaspoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 (15.25 ounce) can apple pie filling, or as needed
  • 2 tablespoons sugar, or to taste
  • 1 teaspoon ground cinnamon, or to taste
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C) and prepare 2 baking sheets with parchment paper.
  • In a large bowl, blend together butter, cream cheese, and vanilla extract until creamy. Then add flour, 5 teaspoons sugar, baking powder, and 1 teaspoon cinnamon until a dough forms.
  • On a floured surface, elegantly roll out the dough into a 1/4-inch thick round and cut out 48 circles using a cookie cutter.
  • Place a teaspoon of apple pie filling on half of the dough circles. Cover each with another dough circle and seal by crimping the edges with a fork. Place the cookies on lined baking sheets.
  • Bake in the preheated oven until the cookies turn golden brown, for about 23 to 29 minutes. Allow to cool for 5 minutes before serving.
  • Combine 2 tablespoons of sugar with 1 teaspoon of cinnamon in a shallow bowl. Roll warm cookies in the sugar-cinnamon mixture until fully coated. Allow the cookies to cool on a wire rack for about 10 minutes.
