Delicious caramel apple pie cookies, reminiscent of Thanksgiving, are perfect served warm with ice cream.
Ingredients:
  • 1 (14.1-ounce) package rolled refrigerated unbaked pie crusts (2 crusts)
  • 1 cup purchased apple pie filling
  • 1/4 cup caramel sauce
  • 1 tablespoon sugar
  • 1/4 teaspoon apple pie spice or groundcinnamon
  • 1 tablespoon half and half
Instructions:
  • First, gather all your ingredients. Preheat your oven to 425 degrees F (220 degrees C) and allow the pie crusts to come to room temperature as per the package instructions. Line two baking sheets with parchment paper and set them aside.
  • Process the apple pie filling in a food processor until it forms 1/4-inch chunks.
  • Roll out the pie crust on a floured parchment paper into a 14-inch circle.
  • Slice the dough into 1/4-inch wide strips using a pizza cutter or a sharp knife.
  • Cover the freshly cut pie dough with parchment paper or plastic wrap and let it rest.
  • Roll out the remaining pie crust dough on a lightly floured piece of parchment paper into a 13-inch circle.
  • Generously coat the rolled pastry with luscious caramel sauce.
  • Spread the apple pie filling evenly over the caramel sauce using a spoon.
  • Weave dough strips into a lattice pattern over the filling.
  • Cut pastry into rounds using a 2 1/2-inch diameter cookie cutter.
  • Place the cookies onto the lined baking sheets.
  • Combine the sugar and apple pie spice in a small bowl, mixing well.
  • Give the cookies a luxurious brush with half and half, then generously sprinkle them with a delightful sugar and spice blend.
  • Bake in the preheated oven in batches until cookies turn a golden brown, approximately 12 minutes.
  • After cooling on baking sheets for 20 minutes, transfer the cookies to a serving tray and enjoy them warm.
