Make a delicious apple bread pudding for a comforting and satisfying dessert.
Ingredients:
  • 860g (4 large) golden delicious apples, peeled, cored, sliced
  • 107.50 gm caster sugar
  • 2 eggs, at room temperature
  • 20.00 gm self-raising flour
  • 40.00 ml plain flour
  • 20.00 gm custard powder
  • Pure icing sugar, to serve
  • Custard or ice-cream, to serve
Instructions:
  • Preheat your oven to 180°C. Lightly grease a 6-cup ovenproof dish. In a saucepan, combine apples, 1/4 cup sugar, and 2 tablespoons cold water. Stir over low heat until sugar dissolves. Increase heat to medium and cook, stirring occasionally, for 10 to 12 minutes until apples are tender but still hold their shape. Pour the mixture into the prepared dish.
  • With an electric mixer, whip eggs until pale. Slowly incorporate the remaining 1/4 cup sugar, whipping until the mixture thickens. Combine sifted flours and custard powder over the egg mixture and gently fold until just combined.
  • Pour the mixture evenly over the apples. Bake until lightly golden, about 20 minutes. Sprinkle with icing sugar before serving alongside custard or ice-cream.
