Indulge in festive apple pudding paired with creamy custard for a Christmas in July treat.
Ingredients:
  • 250g granny smith apples
  • 120g unsalted butter, softened
  • 240g caster sugar
  • 240g currants
  • 12 roasted whole almonds
  • 1/4 tsp grated nutmeg
  • 250g fresh white breadcrumbs
  • 3 egg yolks
  • 125ml (1/2 cup) brandy
  • Custard, to serve
Instructions:
  • Peel, core, and dice the apples. Cream together butter and sugar until light and fluffy, then mix in the apples, currants, almonds, and nutmeg. Gently stir in the breadcrumbs.
  • Whisk eggs and egg yolks, then mix into apple mixture along with the brandy. Transfer into a greased 1-liter pudding basin, top with pleated baking paper, secure with string and foil. Place in a saucepan with water halfway up. Boil, then simmer for 3 hours, checking water level periodically. Let sit for 10 minutes. Unmold and serve with custard.
