Elevate traditional apple slices with a crispy, cinnamon-infused brown sugar crust.
Ingredients:
  • 180g butter, softened
  • 161.25 gm caster sugar
  • 2 eggs, lightly beaten
  • 375.00 ml plain flour
  • 4.00 gm baking powder
  • 5.00 gm ground cinnamon
  • 1 large granny smith apple, peeled, cored, diced
  • 45.00 gm brown sugar
  • 30g butter, softened
Instructions:
  • Preheat oven to 180°C. Grease and line a 3cm deep, 18cm x 28cm slab pan with baking paper. With an electric mixer, beat butter and caster sugar until pale and creamy. Gradually add eggs in 2 batches, mixing thoroughly after each addition.
  • Sift together flour, baking powder, and cinnamon over the butter mixture. Gently fold in with a large metal spoon. Spread the mixture evenly in the pan and arrange the apple slices on top.
  • Prepare the streusel topping by mixing brown sugar, flour, and cinnamon in a bowl. Use your fingertips to blend the butter into the mixture until it forms clumps. Sprinkle the streusel over the apples.
  • Bake for 50 minutes or until golden brown and a skewer inserted into the center comes out clean. Let it cool in the pan, then cut into squares and serve.
