Indulge in a creamy, apple, cinnamon and walnut coffee cake.
Ingredients:
  • 1 package (8 oz) cream cheese
  • 1/3 cup sugar
  • 1 teaspoon grated lemon peel
  • 2 teaspoons lemon juice
  • 2 cups Original Bisquick™ mix
  • 1 package (3 oz) cream cheese
  • 1/4 cup firm butter or margarine
  • 1/3 cup milk
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 1 can (21 oz) apple pie filling
  • 1/4 cup chopped walnuts
Instructions:
  • Preheat oven to 425°F and lightly grease a cookie sheet. In a medium bowl, use an electric mixer on medium speed to beat 8 ounces of cream cheese, 1/3 cup of sugar, lemon peel, and lemon juice until smooth. Set aside.
  • In a large bowl, combine Bisquick mix with 3 ounces of cream cheese and butter using a pastry blender or 2 knives until crumbly. Stir in milk. Transfer dough to a surface dusted with Bisquick mix, roll it around to coat, and knead 8 to 10 times.
  • Roll out the dough into a 12x8-inch rectangle and place it on a cookie sheet. Spread the reserved cream cheese mixture down the center. Make cuts that are 2 1/2-inches long at 1-inch intervals on the 12-inch sides of the rectangle. Fold the strips over the filling, overlapping them. In a small bowl, combine 2 tablespoons of sugar with cinnamon, then sprinkle over the top.
  • Bake for 12 to 15 minutes until golden brown, then cool for 10 minutes. Transfer to a cooling rack and let cool completely. Spoon pie filling down the center of the coffee cake, sprinkle with walnuts, and store in the refrigerator.
