Apple-Cream Cheese Muffins

Delicious homemade muffins with a crumbly streusel topping.
Ingredients:
  • 3/4 cup packed brown sugar
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 2/3 cup oil
  • 1/4 cup applesauce
  • 1 teaspoon vanilla
  • 1 large apple, peeled, shredded (about 1 cup)
  • 1/3 cup cream cheese (from 8-oz package)
  • 3 tablespoons packed brown sugar
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 tablespoon butter or margarine, softened
Instructions:
  • Preheat oven to 350°F. Place paper baking cups in 15 muffin cups. Set aside 1 tablespoon of brown sugar for filling.
  • Using an electric mixer in a large bowl, combine the remaining brown sugar for the muffins with 1 3/4 cups of flour, baking powder, cinnamon, and salt on low speed until well mixed. Set aside 1 tablespoon of the beaten egg for later use. To the flour mixture, add oil, applesauce, vanilla, and the rest of the beaten egg. Mix on medium speed until fully combined. Gently fold in the diced apple using a spoon.
  • Mix cream cheese, 1 tbsp brown sugar, and 1 tbsp egg in a small bowl. Fill muffin cups halfway with batter. Add a teaspoon of cream cheese mixture on top. Finish filling cups 2/3 full with remaining batter. Sprinkle streusel mixture over the top.
  • Bake for 22 to 26 minutes or until a toothpick inserted in the center comes out clean. Remove from the pan and allow to cool for about 10 minutes.
