Ingredients:
  • 1 cup shortening
  • 2 cups packed brown sugar
  • 2 eggs
  • 2 cups thick applesauce, drained
  • 0.5 cup cold, brewed coffee
  • 3.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 0.5 cup chopped walnuts
Instructions:
  • Blend the shortening and sugar until creamy, then mix in the eggs until fully incorporated.
  • Combine the delightful flavors of applesauce and coffee into the mixture.
  • Combine the remaining ingredients in a separate bowl. Add this mixture to the applesauce and blend well. Refrigerate for a minimum of 2 hours before serving.
  • Preheat your oven to 400 degrees F and lightly grease a cookie sheet. Spoon rounded tablespoonfuls of dough onto the sheet, keeping them about 2 inches apart.
  • Bake for 9 to 12 minutes, then cool on wire racks.
