Applesauce Spice Cake

Fall spiced cake with cream cheese frosting option.
Ingredients:
  • 2 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon grated nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup (112g, stick) unsalted butter, room temperature
  • 1 cup (200g) sugar
  • 3 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 cup applesauce
  • 1/4 cup plain yogurt diluted a bit with milk, or 1/4 cup of buttermilk
  • 1/2 cup of chopped walnuts
  • 1/2 cup raisins
  • 1 batch Cream Cheese Frosting , optional
  • Extra walnuts to decorate, optional
Instructions:
  • Preheat your oven to 375°F. Lightly grease an 8-inch square baking pan and line it with parchment paper to create a sling.
  • Whisk together flour, baking soda, cinnamon, allspice, nutmeg, cloves, and salt in a medium bowl until well combined.
  • Prepare the batter: Using an electric or stand mixer, cream the butter until light. Incorporate the sugar until fluffy, then mix in the eggs one at a time. Add vanilla and applesauce and mix until smooth. Slowly add half of the dry ingredients, then pour in the thinned yogurt or buttermilk. Finish by adding the remaining dry ingredients, nuts, and raisins, being careful not to over-mix.
  • Bake the batter in a prepared cake pan at 375°F on the middle rack for 25-35 minutes until a toothpick inserted in the center comes out clean and the cake springs back when touched.
  • Remove the cake from the oven and let it cool for 15 minutes. Use the parchment to lift the cake from the pan and transfer it to a wire rack to cool completely. Frost with cream cheese frosting and sprinkle with walnuts if desired, or serve plain. Store the cake in the pan or an airtight container. Share your feedback below if you loved the recipe!
