Never Fail Applesauce Spice Cake

Easy one-bowl spice cake with applesauce and pecans - quick and delicious!
Ingredients:
  • 1.75 cups white sugar
  • 1.5 teaspoons baking soda
  • 0.5 teaspoon baking powder
  • 0.75 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground allspice
  • 0.5 cup buttermilk
  • 1.5 cups applesauce
  • 2 eggs
  • 0.75 cup chopped walnuts
  • 0.25 cup butter
  • 1 cup chopped pecans
  • 4 cups confectioners' sugar
  • 1 (8 ounce) package cream cheese, softened
  • 1.5 teaspoons vanilla extract
Instructions:
  • Combine flour, white sugar, soda, salt, baking powder, and spices into a large mixing bowl through sifting. Add 1/2 cup of butter or margarine, buttermilk, and applesauce. Use an electric mixer on medium speed to beat the mixture for 2 minutes. Incorporate eggs. Gently fold in 3/4 cup chopped nuts. Pour the batter into a greased and floured 9 x 13 inch pan.
  • Bake at 350 degrees F (175 degrees C) for 50 minutes until golden brown.
  • Blend confectioners' sugar, cream cheese, and vanilla into a smooth mixture. Melt butter over medium heat and add chopped pecans. Stir continuously until pecans are browned. Incorporate cooled pecans into the cream cheese mixture and use it to frost the cake once cooled.
