Applesauce-Carrot Spice Cake

Indulge in a mouthwatering applesauce-carrot cake made with Gold Medal® whole wheat flour, the ultimate dessert treat.
Ingredients:
  • 1 cup old-fashioned or quick-cooking oats
  • 1 1/4 cups unsweetened applesauce
  • 1 cup packed brown sugar
  • 2 cups shredded carrots (about 4 medium)
  • 1/2 cup fat-free egg product or 2 eggs
  • 1/3 cup canola oil
  • 1 1/2 cups Gold Medal™ whole wheat flour
  • 1 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 1/2 cup golden raisins
  • 4 oz (from 8-oz package) reduced-fat cream cheese (Neufchâtel), softened
  • 1/4 cup powdered sugar
  • 3 tablespoons milk
Instructions:
  • Preheat the oven to 350°F and generously coat a 12-cup fluted tube cake pan with cooking spray.
  • Combine oats, applesauce, brown sugar, carrots, egg, and oil in a large bowl until evenly mixed. Gently fold in the rest of the cake ingredients until just combined. Transfer the batter to the pan.
  • Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely for about 1 hour.
  • In a small bowl, use an electric mixer to beat cream cheese and powdered sugar until smooth. Mix in milk and vanilla until well combined. Place cake on a serving plate and generously spoon frosting over the top.
