Warm cinnamon-spiced winter muffins - perfect for breakfast!
Ingredients:
  • 1.5 cups instant oatmeal
  • 1.25 cups all-purpose flour
  • 0.75 teaspoon baking soda
  • 0.125 teaspoon ground cinnamon
  • 0.5 cup packed brown sugar
  • 1 egg white
  • 1 cup applesauce
  • 0.5 cup milk
  • 0.25 cup instant oatmeal
  • 0.25 cup packed brown sugar
  • 0.875 tablespoon ground cinnamon
  • 1 tablespoon melted butter
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C. Grease 12 muffin cups or use paper liners. In a mixing bowl, combine 1 1/2 cups oatmeal, flour, baking powder, baking soda, and 1/8 teaspoon cinnamon. Set aside.
  • Combine 1/2 cup brown sugar, egg white, applesauce, and milk in a mixing bowl and whisk until smooth. Add the flour mixture and stir until evenly moistened, allowing small lumps to remain. Pour the batter into the muffin tin. In a small bowl, mix 1/4 cup oatmeal, 1/4 cup brown sugar, 1 tablespoon cinnamon, and melted butter, then sprinkle over the muffins.
  • Bake in the preheated oven for about 20 minutes, or until golden and the tops spring back when lightly pressed. Let cool for at least 10 minutes before serving.
