Delicious oat bran muffins with applesauce for a healthy snack, hearty treat, or convenient breakfast option. Great for weight loss!
Ingredients:
  • 1.5 cups oat bran
  • 0.5 cup dark brown sugar
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 0.5 teaspoon salt
  • 1 cup chilled applesauce
  • 2 large eggs
  • 0.25 cup vegetable oil
Instructions:
  • Preheat the oven to 400 degrees F (205 degrees C) while preparing 12 muffin cups with liners or grease.
  • In a large bowl, combine oat bran, flour, brown sugar, baking powder, baking soda, and salt. Add chilled applesauce, eggs, and oil; mix until well combined. Spoon batter into muffin cups and let it rest for 10 minutes before baking.
  • Bake in the preheated oven for about 15 minutes until muffins are golden brown and a toothpick inserted into the center comes out clean.
