Ingredients:
  • 250.00 ml oat bran
  • 155.00 gm wholemeal spelt flour
  • 82.50 ml Natvia (or Stevia)
  • 6.00 gm baking powder
  • 1.25 gm baking soda
  • 0.60 gm iodised salt
  • 0.63 gm ground cinnamon
  • 1 tsp orange zest, grated
  • 1 egg, lightly beaten
  • 62.50 ml agave syrup or honey
  • 4.40 gm pure vanilla extract
  • 36.80 gm rice bran oil
  • 321.88 gm milk or soy milk
  • 85.00 gm (approx 80g) sultanas or dried currants
Instructions:
  • Preheat your oven to 200C and prepare a muffin pan with 12 paper liners.
  • Combine flour, oat bran, sweetener, baking powder, baking soda, salt, cinnamon, and orange zest in a large bowl, stirring until well mixed.
  • Combine the lightly beaten egg, agave syrup, vanilla extract, rice bran oil, and milk in a separate bowl and whisk until well combined.
  • Combine the wet ingredients with the dry ingredients, stirring until just moistened. Gently fold in the raisins. Pour the thin batter into the muffin cups and bake for 16 to 20 minutes until a toothpick inserted into the center comes out clean.
  • Take out of the oven and let them cool on a wire rack until slightly warm before enjoying. Yields approximately 12 regular-sized muffins.
