Delicious and filling fiber-packed muffins for a guilt-free treat.
Ingredients:
  • 1 cup rolled oats
  • 1 cup buttermilk
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 cup applesauce
Instructions:
  • In a small bowl, combine oats and buttermilk. Allow to sit at room temperature for two hours.
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) and prepare your muffin tin by greasing it or lining it with paper liners.
  • Combine whole wheat flour, baking powder, baking soda, and brown sugar in a large bowl. Add oat/buttermilk mixture, applesauce, and egg; mix thoroughly. Transfer batter into muffin cups.
  • Bake in a preheated oven for 30 minutes, or until a toothpick inserted in the center of the muffin comes out clean.
