Deliciously moist lemon cake made with apricot nectar and lemon cake mix for a surprisingly easy treat.
Ingredients:
  • 1 (18.25 ounce) package lemon cake mix
  • 0.33333334326744 cup white sugar
  • 0.5 cup vegetable oil
  • 1 cup apricot nectar
  • 4 eggs
  • 1 cup confectioners' sugar
  • 2 tablespoons lemon juice
Instructions:
  • Prepare your 10-inch tube pan by greasing and flouring it. Preheat the oven to 325°F (165°C).
  • In a bowl, mix cake mix, sugar, cooking oil, and apricot nectar until smooth. Beat with a mixer for two minutes. Then, add eggs one at a time, beating for 30 seconds after each addition. Transfer batter to a pan.
  • Bake for 50-60 minutes until golden brown. Let cool in the pan for 10 minutes then carefully transfer to a plate.
  • Combine freshly squeezed lemon juice with confectioners' sugar in a small bowl until you achieve your preferred thickness. Pour the glaze over the sides of the warm cake.
