Delicious apricot halves filled with sweet mascarpone, topped with apricot-balsamic vinegar sauce.
Ingredients:
  • 1 cup whipping cream
  • 3 tablespoons white sugar
  • 4 ounces mascarpone cheese
  • 2 tablespoons apricot nectar
  • 0.5 teaspoon vanilla extract
  • 1 pinch ground cardamom
  • 3 tablespoons apricot preserves
  • 1 tablespoon balsamic vinegar
  • 8 fresh apricots, pitted and halved
Instructions:
  • In a chilled bowl, use an electric mixer to whip the cream until soft peaks form. Mix in the sugar and set aside. In a separate bowl, use the electric mixer to whip the mascarpone cheese until very soft. Incorporate the apricot nectar, vanilla extract, and cardamom. Gently fold the mascarpone mixture into the whipped cream.
  • Combine the apricot preserves and honey in a microwave-safe bowl. Microwave for 30 seconds until just warm. Stir in the balsamic vinegar until well mixed.
  • Fill each apricot half with a generous spoonful of mascarpone cream and arrange them on a serving dish. Drizzle the fruit with balsamic sauce before serving.
