Aquafaba Mayonnaise

Vegan mayo made easy and fast using chickpea liquid.
Ingredients:
  • 0.5 cup aquafaba (liquid from can of chickpeas)
  • 1.5 teaspoons apple cider vinegar
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon dry mustard
  • 1 (1 gram) packet stevia powder
  • 1 cup canola oil, or more as needed
Instructions:
  • In a tall Mason jar, combine aquafaba, apple cider vinegar, salt, mustard, and stevia. With an immersion blender, slowly pour in the oil while blending continuously until a thick and creamy mayonnaise forms, approximately 2 minutes.
