Aquafaba Whipped Cream

Whipped vegan aquafaba cream: Chill chickpea liquid for quicker stiff peaks.
Ingredients:
  • 0.75 cup aquafaba (liquid from can of chickpeas)
  • 0.25 teaspoon cream of tartar
  • 1 tablespoon vanilla extract
  • 0.66666668653488 cup powdered erythritol sweetener (such as Swerve®)
  • 2 tablespoons melted coconut oil
Instructions:
  • Chill aquafaba in the refrigerator for a minimum of 4 hours, or preferably overnight.
  • Using a mixer, whip aquafaba until it becomes foamy, which should take around 2 minutes. Add cream of tartar and mix on high until stiff peaks form, which should take about 2 more minutes. Finish by adding vanilla and beating for an additional minute.
  • Combine the powdered sweetener and melted coconut oil, then whip until completely mixed, approximately 1 minute.
