Italian twist on quick Chinese chicken salad using pre-made coleslaw mix for easy prep.
Ingredients:
  • Tangy Peanut Dressing
  • 8 uncooked manicotti shells
  • 5 cups coleslaw mix
  • 1 1/2 cups finely chopped cooked chicken breast
  • 1 cup fresh bean sprouts, finely chopped
  • 1/2 cup peanuts, chopped
  • 1/4 cup canned water chestnuts, chopped
Instructions:
  • Prepare a flavorful Tangy Peanut Dressing.
  • Prepare the manicotti according to package instructions. Once cooked, rinse with cold water and drain well.
  • Finely chop 1 cup of coleslaw mix, then combine it with chicken, bean sprouts, peanuts, and water chestnuts.
  • Stuff manicotti shells with flavorful chicken mixture. Spread out the rest of the coleslaw mix evenly onto 4 plates. Place the stuffed manicotti on top. Finish by drizzling everything with dressing.
