Savory ground beef over fragrant jasmine rice with garlic, soy, ginger, and a spicy kick - a delicious all-in-one meal!
Ingredients:
  • 1 cup dry jasmine rice
  • 1 pound lean ground beef
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 0.25 cup chopped fresh parsley
  • 2 large cloves garlic, thinly sliced
  • 2 tablespoons minced fresh ginger root
  • 0.25 teaspoon crushed red pepper
  • 0.25 cup beef stock
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon chile paste
  • 0.5 teaspoon Worcestershire sauce
Instructions:
  • Bring the rice and water to a boil in a medium saucepan, then cover, reduce heat, and simmer for 20 minutes.
  • Brown the ground beef in a skillet over medium heat, then drain and set aside.
  • In a skillet over medium heat, heat olive oil. Add red and green bell peppers, parsley, garlic, and ginger. Season with red pepper, salt, and black pepper; sauté until tender.
  • Add the beef back into the skillet with beef stock, soy sauce, chile paste, and Worcestershire sauce. Cook and stir until the sauce thickens and the dish is heated through. Serve over cooked rice.
