Asian Steak Salad

Whip up a quick Asian stir-fry salad in 20 minutes from Betty Crocker's Heart Healthy Cookbook for a light and delicious dinner option!
Ingredients:
  • 1 pound cut-up beef for stir-fry
  • 1 package (3 ounces) Oriental-flavor ramen noodle soup mix
  • 1/2 cup Asian marinade and dressing
  • 1 bag (10 ounces) romaine and leaf lettuce mix
  • 1 cup fresh snow (Chinese) pea pods
  • 1/2 cup matchstick-cut carrots (from 10-ounce bag)
  • 1 can (11 ounces) mandarin orange segments, drained
Instructions:
  • Prepare a 12-inch nonstick skillet with cooking spray and heat it over medium-high heat. Add the beef to the skillet, season with 1 teaspoon of the soup mix seasoning (discard the rest), and cook for 4 to 5 minutes until browned, stirring occasionally. Finish by stirring in 1 tablespoon of the dressing.
  • - Start by gently breaking the block of noodles from the soup mix into bite-sized pieces. - Combine the noodles with the lettuce, pea pods, carrots, and orange segments in a large bowl. - Pour the remaining dressing over the mixture and toss until everything is evenly coated. - Divide the salad among individual plates and sprinkle the top with tender strips of beef.
