Refreshing salad, ideal for sunny days.
Ingredients:
  • 1 Lebanese cucumber
  • 1 large carrot, peeled
  • 1/2 small (about 300g) Chinese cabbage (wombok) (see note)
  • 200g marinated tofu (see note), thinly sliced (we used a teriyaki-flavoured tofu)
  • 4 spring onions, finely shredded
  • 125.00 ml fresh mint leaves
  • 125.00 ml fresh coriander
  • 40.00 gm caster sugar
  • 80ml rice vinegar
  • 21.00 gm light soy sauce
  • 1/2 tsp sesame oil
  • Pinch of ground Szechuan pepper
Instructions:
  • Create a flavorful dressing by combining sugar and vinegar in a small pan over low heat until the sugar dissolves. Simmer gently over medium heat until it thickens, then transfer to a heatproof bowl. After cooling for 10 minutes, mix in soy sauce, sesame oil, and Szechuan pepper.
  • While the dressing is marinating the tofu and veggies, skillfully julienne the cucumber and carrot into delicate matchsticks. Gently shred the cabbage and mix it with the tofu, spring onion, and fresh herbs in a bowl. Drizzle the dressing over the mixture and gently mix everything together before serving.
