Cheesy asparagus and mushroom frittata: a perfect pairing for a delicious meal!
Ingredients:
  • 1 tablespoon butter
  • 3 tablespoons olive oil
  • 0.5 pound fresh asparagus, trimmed and cut into 1 inch pieces
  • 0.5 pound fresh mushrooms, sliced
  • 6 eggs
  • 1 tablespoon water
  • 1 teaspoon chopped fresh thyme
  • 3 tablespoons freshly grated Parmesan cheese
  • 0.5 cup shredded mozzarella cheese
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • In an oven-safe skillet over medium heat, melt butter until sizzling. Add olive oil and asparagus, cook until tender (about 10 minutes). Toss in mushrooms, cook for an additional 5 minutes.
  • Combine eggs, water, and thyme in a bowl. Pour into skillet, reduce heat to low, cover, and cook for 5 minutes.
  • Place the skillet in the oven and bake for 10 to 15 minutes until the eggs are set. Sprinkle the Parmesan and mozzarella cheese on top, then broil until the cheeses are melted and lightly browned.
